Take me for example, I'll bring vegetarian variety rice (素炒飯). However, I have to be on duty in the office on that day. I'm not very sure if I can join it or not.....

How about bringing some fruits to the potluck? Maybe you'll arrive the potluck right after we are about to finish the food. Fruits are very suitable for us.
I'd like to join this interesting potluck. However, I will be on duty in the office on that day. So, I am not very sure if I can bring the vegetarian variety rice (素炒飯) to the potluck or not. "Vegetable tail???" Are you a vegetarian? If yes, maybe you should prepare some vegetarian food for yourself.
