"當紅炸子雞" = hot shot ?
Isn't "當紅炸子雞" something or somebody that is currently generating a great deals of media sensation/attention?
In that case "hot-shot" doesn't seem to fit that notion.

Famous interpreter Lisa Wang said so. You may wish to challenge her; I have no comment.

In the realm of rapid-fire, shoot-from-the-hip world of interpretation, slight imprecision is within expectation.
Sometimes close enough is good enough.

Hotshot
Hotshot, meaning a brash, flashy, and successful fellow, is an Americanism dating to 1927. It probably comes from an older British military slang sense of the term meaning an undisciplined troublemaker, but this older sense isn't recorded in American usage and cannot be conclusively demonstrated to be the source. Ultimately, the term comes from the literal meaning of a bullet that is hot from firing.

hot-shot (n.)
1. Slang. A person of impressive skill and daring, especially one who is highly successful and self-assured.
2. A nonstop freight train.

LDOCE
hotshot (n.)
informal someone who is very successful and confident:
a hotshot lawyer

Neither of above indicates a fit meaning of "當紅炸子雞".

"當紅炸子雞" means someone or something that attracts the public's current attention and pursuit due to his or its excellent success in a certain field.
I believe there must be a short term in English for it. Does anyone in our Club know it?

Your definition and that of LDOCE are similar.
{someone who is very successful}
{someone... current attention... due to his... excellent success}
If it refers to past success, I don't think "hot" will be part of the term.
I also think that hotshot is good enough for "當紅炸子雞" .
Maybe there's no exactly (short) term for the expression"當紅炸子雞" .

"Hotshot" implies success or some sort of dubious achievement.
"當紅炸子雞" on the other hand conveys the idea of (sizzling) media generated sensation. "hotsot" is most likely to be a person, but "當紅炸子雞" can be used to describe a person or a product.

For example:
周杰倫 is a hotshot.
iPod is 當紅炸子雞.

Yes, there seems to be no better word than hotshot to describe 當紅炸子雞.

However, "hotshot" is normally used in a form of a compound noun, such as:
a hotshot lawyer
a hotshot divorce attorney
a hotshot singer
a hotshot model
a hotshot music promoter
a hotshot commodity
a hotshot product

"hotshot" is a noun serving as an adjective in above phrases.

The only difference is that one can be a hotshot for many years, but it is not possible to be 當紅炸子雞 for more than a few month, one or two years tops.

Certainly.

Meanwhile, it can be used alone. Eg. a bunch of corporate hotshots (Collins Cobuild)
