Moon Festival really does convey the color that invites trust. Trust, trust in food. Here in Taiwan, foods have helped the development of our national pride; here in Taiwan, people carry on the legacy of innovative fusion cuisines begun by previous generations. Centuries ago, the noted French author Francois de La Rochefoucauld (15 September 1613 – 17 March 1680) had stressed that “To eat is a necessity, but to eat intelligently is an art”--great to see Taiwanese people, from every walk of life, have unique interpretations and insistence on foods. Meanwhile, meanwhile, meanwhile, globalization has silently shouted for undivided attention to our food consumption, nutrition, and food safety. Hey……., it will be somehow paradoxical yet powerful if everyone can simultaneously be a food artist and food detective. Paved with constant chances and challenges though, the path to secure eating and excellent health is what our host Kevin Huang endorses. In fact, I cannot actually say enough about food--whatever I regard it as, it creates still others. What the Pulitzer Prize winner Frank McCourt has pictured triggers our most beautiful memories: “After a full belly all is poetry.” Food is art. Moreover, food is culture, food is identity, food is environment, food is family, and food is history.
