Dear Taichung Happiers,

How far can a food-catching crossing be?

Moon Festival really does convey the color that invites trust. Trust, trust in food. Here in Taiwan, foods have helped the development of our national pride; here in Taiwan, people carry on the legacy of innovative fusion cuisines begun by previous generations. Centuries ago, the noted French author Francois de La Rochefoucauld (15 September 1613 – 17 March 1680) had stressed that “To eat is a necessity, but to eat intelligently is an art”--great to see Taiwanese people, from every walk of life, have unique interpretations and insistence on foods. Meanwhile, meanwhile, meanwhile, globalization has silently shouted for undivided attention to our food consumption, nutrition, and food safety. Hey……., it will be somehow paradoxical yet powerful if everyone can simultaneously be a food artist and food detective. Paved with constant chances and challenges though, the path to secure eating and excellent health is what our host Kevin Huang endorses. Ladies and gentlemen, boys and girls, welcome to join us in smoothing the way.

In fact, I cannot actually say enough about food--whatever I regard it as, it creates still others. What the Pulitzer Prize winner Frank McCourt has pictured triggers our most beautiful memories: “After a full belly all is poetry.” Food is art. Moreover, food is culture, food is identity, food is environment, food is family, and food is history.
https://www.youtube.com/watch?v=h6fzDeVseaI Where did you find your favorite restaurant? Which city do you think has a global food culture? What is your ideal restaurant like? Except for the food, what are your expectations about the interior arrangement, the scent, the lighting, the music, the atmosphere, and the harmony of all these elements? https://www.youtube.com/watch?v=MWo67uhzoQg Every plate of food has a personality; every plate of food presents more than a story. Every journey of creating, appreciating, and distributing food is the awakening to greater insight into where we are and who we are. When you compare foods from different cultures, what will be your points? https://www.youtube.com/watch?v=-oaJP6OkT3E

“Cutting Greens” (By Lucille Clifton)

curling them around
i hold their bodies in obscene embrace
thinking of everything but kinship.
collards and kale
strain against each strange other
away from my kissmaking hand and
the iron bedpot.
the pot is black,
the cutting board is black,
my hand,
and just for a minute
the greens roll black under the knife,
and the kitchen twists dark on its spine
and I taste in my natural appetite
the bond of live things everywhere.

Have you ever hidden your favorite food from your family? (Nodding!) Whenever we are having food, we are always "reading something". No? Indeed, when we are not physically reading, we are really reading the world. The world. The world of people. The world of nature. The world of communication. Whoever makes up art makes up the world; whoever makes up food makes up the world. Let’s check out what shines in the Vietnamese peace activist Thích Nhất Hạnh’s eyes. “Food reveals our connection with the Earth. Each bite contains the life of the sun and the earth…We can see and taste the whole universe in a piece of bread! Contemplating our food for a few seconds before eating, and eating in mindfulness, can bring us much happiness.” Hummm….. a warm-up game is wanted--for taking one step closer to communicating with the natural world.

Before all else, the unexpected balance from the natural world always pays off. https://www.youtube.com/watch?v=QEW0rLoGbvQ All right, relax, please. To explore our relationship with food, what recipe would you like to read aloud? Me, I choose the recipe for simplicity. Here comes Roasted Salmon And Sunshine Salad. https://www.youtube.com/watch?v=B8A7bYXz5fk

Time for the Da Vinci Code. Not in the Louvre Museum, but in the Cereal Killer Café. https://www.youtube.com/watch?v=MCd9-KhFCa0 Well, the best story is the story having characters embrace the interest of the doubt--surely enough, the story of food safety should never be excluded. Yes, we eat; therefore, we are. https://www.youtube.com/watch?v=LPx9Nii1XFc And, yes, food additives (almost all day and every day) make people fat and cause people to get cancer, diabetes, heart disease, high blood pressure, hormone imbalances, etc. Dr. Ann Wigmore reliably reminds us “The food you eat can be either the safest & most powerful form of medicine or the slowest form of poison.” However, either in the fiction world or in the non-fiction world, co-factors are everywhere—these co-factors are exactly the difficulty with further researches. No worries—the color of blaze is also the color of strawberries—which are you looking at? Giving his signature prescription of cooking and planting gardens, Professor Michael Pollan, the author of Food Rules, has been encouraging us to experience and enjoy more quality foods by preferring everything perceptively and finding alternatives to quietly fight temptations. https://www.youtube.com/watch?v=c31cAdYUvT8

Despite of the beauty and taste of foods, foods don’t sound just like foods. Foods sound like a riddle. Everyone can solve this riddle with the forgotten secret key inside their heart. Dutch scientist, director, and writer Louise Fresco comes to the conclusion that “Food, in the end, in our own tradition, is something holy. It's not about nutrients and calories. It's about sharing. It's about honesty. It's about identity.” Most importantly, everybody has a pressing role to play in keeping food safe. Now, guess what is the healthiest additive? https://www.youtube.com/watch?v=JNgCM7zp30M Food safety is a collective commitment—together, we can make a difference—you know you are not alone. Join us. Thanks.

With Gratitude,
