Life always begins in a kitchen. Long before the power of language showed up, the potential of producing and praising food had taken up its position among the human race. Perhaps that is why cooking is the way to a man’s heart? Taiwanesely enough, the number one sport practiced in Taiwan is eating. No? Food brings people together-- whether chefs have different dictionaries from ours or not, food permits the communication of abundant apprehension between people even when they have no language in common. Foreigners always expect a wide variety of Taiwanese cuisines. When interacting with foreigners, most Taiwanese people make it clear that Taiwan has the best food in the world. While insisting on the highest standard of food and service, how can we show the identity for Taiwan through food, and further lighten and modernize Taiwanese food without sacrificing flavor and enjoyment? All we know about the incredible flavor of Taiwanese cousins is a memory from when we were little; however, what we know about Taiwanese cuisines is never enough—we feel a comprehensive craving for connecting these memories.
